Ingredients:
1 kg Beef Shin
15g butter
150g Soy sauce
2 Tbsp Sugar
2 bunches of spring onions
1 onion
5 cloves garlics
Methods:
1. Preparing:
Smash your garlic.
Cut your onion into large pieces.
Cut your spring onions into long stripes.
2. Building up the fragrant:
Heat your pan. Cook your beef shin over medium high heat until both sides are browned.
Set the beef aside. Melt your butter in the pan over low heat. Cook your aromatics for 2 - 3 minutes until fragrant.
Increase the heat to high. Put the beef shin back in (excluding the bloody water). Add sugar & soy sauce.
3. Finishing:
When the soy sauce is boiling, add water to 1 cm above the meat. Keep it boiling over a high heat for 5 minutes and remove the scum on the surface.
Turn the heat to low, and pop the lid on. Let it cook for 1 to 1.5 hours until your desired texture (I suggest you check after 1 hour).
Let it sit in the pan for at least 2 hours so the meat can absorb the flavours or overnight for the best result.
