Sweet Bean Barley Porridge (簡易八寶粥)
Ingredients:
70g Red Kidney Beans
70g Canellini Beans
140g Adzuki Beans
(Your can choose your preferred beans)
140g Barley
100g Chopped Dates/Dried Logan berries
100g Brown Sugar
Methods:
1. Prepare Beans: wash and soak beans overnight.
2. Cooking: Put your beans, barley and chopped dates in a pot. Add water to double the volume. Bring them to a boil.
3. Simmering: When it's boiling, pop on a lid. Cook over low heat for 1 hour until the barlay release the starch and the porridge thickens.
4. Seasoning: Add the sweetner of your choice to adjust the flavour. Let it cook uncovered for another 10 minutes.
Enjoy cold or warm!
