Ingredients:
750g turkey thigh mince (7% fat)
1 onion
1 Tbsp olive oil
2 Tbsp grand masala
1 Tbsp white pepper
1 Tbsp black pepper
1 Tsp cayenne chilli powder
1.5 Tbsp salt
75g dried breadcrumbs/panko
1 egg
150g milk
Methods:
Finely chop onions. Cook them with olive oil until they become translucent.
Add spices and cook until fragrant, then wait for it to cool before mixing.
Mix breadcrumbs with milk, egg, and salt. Then, add turkey mince. Mix them until the mixture is sticky and bouncy. Add spiced onions and mix them thoroughly. Put them in the fridge overnight to allow the flavours to fully combine.
Take roughly 80g of meatball mix, shape it into a ball. Toss it between your hands at least 20 times. Then, shape them as you desire.
Cooking:
Pan fry: Cook over medium heat for 2 minutes. Turn the meatball over (put cheese on the meatballs if you are making a burger) and continue to cook it for another 2 minutes with the lid on.
Air fry: 210 Celsius for 13 minutes.
