Ingredients:
100g tapioca starch
80g boiling water
2 Tbsp brown suger
Methods:
1. Prepare 80g boiling water, and add the boiling water into tapioca starch.
2. Stir with a spatula until it comes together. Then knead the dough for about 2 - 3 minutes until smooth.
3. Divide the dough into 4 portions and roll each portion into a long stick. Flatten it and cut it into 0.5 cm wide small pieces.
4. Prepare boiling water. Add tapioca bites in and cook until they float to the surface.
5. Continue cooking over low heat for 5 minutes. Turn off the heat and let it sit covered for 10 minutes. This gives you crunchy and chewy texture. If you prefer tender and chewy texture, cook over low heat for 10 minutes and sit covered for 20 minutes.
6. Put tapioca bites in icy cold water until completely cooled down (Change water when it gets warm). Drain the water and add sugar. Let it sit for around 15 minutes to allow it absorb the sweetness.
