Taiwanese savoury glutinous rice cakes

Ingredients:
140g long grain glutinous rice
(Below is enough for 3 portions rice cakes)
6 - 8 dried shiitake mushrooms
20g dried shrimps
500g pork mince
5 Tbsp/75g soy sauce
2 Tbsp sugar
1 Tbsp white pepper
1 birdeye chilli (optional)
30g crispy onions
Methods:
1. Soak long grain rice for 1 hour and dried shiitake mushroom until soft (1 - 2 hours).
2. Finely chop shiitake mushroom.
3. Heat oil in a pan over medium heat. Add shiitake mushroom, dried shrimps and chilli, and cook them until fragrant.
4. Increase the heat to high. Add pork mince and cook until no excessive liquid.
5. Add white pepper, sugar and soy sauce. Stir fry until well combined.
6. Add crispy onions and water to just over the pork mince. Cook covered over low heat for 10 minutes to combine the flavours.
7. Fill 1/3 of a bowl with the mushroom pork. Fill another 1/3 with the soaked rice into the bowl and leave 1/3 space to allow rice to grow. Add water to just over the rice.
8. Steam the rice cake for 30 minutes, and let it cool down for 10 minutes before removing it from the bowl. Serve it with your favourite sauce.
