Pad Krapao
Ingredients:
500g pork mince (5% fat)
1tbsp soy sauce
1tbsp fish sauce
1tbsp sugar
1 bulb of medium garlic
2 birdeye chillies
1tbsp olive oil
30g basil (leaves only)
Best served with fried eggs
Methods:
Heat the pan and olive oil. Add garlic and chilli, and cook them until the garlic is golden.
Add pork mince. Cook it until no excess liquid in the pan and the pork is slightly brown.
Add soy sauce, fish sauce and sugar. Stir fry for roughly 2 minutes.
Add basil. Quickly stir-fry for 10 seconds.
Serve with fried eggs: Fry eggs over high heat with olive oil. Turn the heat to low immediately after dropping the eggs in the pan.
