Ingredients:
200g prawns, defrost and patted
2 spring onions, chopped into small pieces
2 cloves garlic, chopped into small pieces
1/4 tsp black pepper
1/4 tsp white pepper
6 eggs
Salt, to taste
Oil, for cooking
Optional:
1 birdeye chilli, chopped into small pieces
Methods:
1. Chop the spring onions, garlic and chillies into small pieces.
2. Pat the prawns with kitchen towels until completely dry, and then cut open along the back (Optional, for quicker cooking and appearance).
3. Crack eggs, add salt and whisk them until combined.
4. For stainless pan - Heat a pan until water droplets dance on the surface. Turn off the heat. Add oil and swirl the pan until oil coats the pan.
5. Return to low heat. Add spring onions, garlic and chilli. Cook until fragrant.
6. Increase the heat to high. Add prawns to the pan. Do not stir until the prawns start to change colours. When the prawns change colours on both sides, season with black pepper and white pepper and quickly stir.
7. Turn off the heat. Pour in eggs. Bring the heat back to low. As the eggs begin to set, gently and slowly stir with a spatula. Cook until the texture you like.
