Peanut dessert soup (花生仁湯)
Ingredients:
250g peanuts
750g water
250g milk
3 - 5 Tbsp (45g - 75g) sugar
Methods:
Wash and soak peanuts for 4 hours. Drain the water and freeze the peanuts overnight
Add water at a 3:1 ratio to the peanuts. Bring to a boil, then cover and simmer over low heat for 1 hour.
If the peanuts are not soft yet, increase the cooking time and check every 30 minutes. Once they are soft, add sugar and milk. Cook for another 10 minutes, or until the sugar has dissolved.
Best served cold.
