Ingredients:
600g beansprouts
1 clove garlic
4 spring onions
1 birdeye chilli (optional)
10g butter
1 Tbsp soy sauce
1 tsp black pepper
1/2 tsp sugar
A splash of balsamic vinegar
Salt to taste
Methods:
Chop garlic, spring onions and chilli into small pieces. Separate the green and white parts of the spring onions.
Heat a pan over low heat and melt the butter. Cook garlic, chilli and the white parts of the spring onions until fragrant.
Increase the heat to high and wait for 20 seconds until the heat comes up. Add beansprouts and let it sit for around 30 seconds without stirring.
Season with black pepper, salt and soya sauce. Add sugar and balsamic vinegar to balance the taste. Quickly stir fry until the beansprouts are soft.
Add the green parts of the spring onions. Stir fry for 20 seconds and serve.
