Taiwanese sweet potato tapioca cubes

Ingredients:
For 2 servings:
300g sweet potato (orange baking)
150g tapioca starch
Topping for 1 serving:
2 Tbsp brown sugar (Optional)
50 ml single cream (Optional)
Methods:
1. Chop sweet potato into thin slices, and steam it for 30 minutes until a fork can poke through.
2. Mash the sweet potato and mix it with tapioca starch to form a dough.
3. Divide the dough into 4 and shape them into long sticks. Then, chop the sticks into 1 cm wide cubes.
4. To cook - add cubes into boiling water. When they float to the surface, move the cubes into icy cold water
To store - freeze the cubes on a plate. Move them to a container after frozen. The cubes can be stored in the freezer up to 1 month.
5. Put the cooked cubes in the icy cold water to cool down. Enjoy with brown sugar and cream.
