Simple Chinese leaves (家常白菜)
Ingredients:
2 Chinese leaves (500 - 600g/each), chopped
2 cloves garlic
10 dried shiitake mushrooms, sliced
30g dried shrimp
salt to taste
1 Tbsp soy sauce
Optional:
1 tsp white pepper
crispy onions
Methods:
1. Soak dried shiitake mushrooms in water until soft. Slice into thin strips.
2. Heat cooking oil in a pan over low heat. Add garlic and cook until fragrant.
3. Add shiitake mushrooms and dried shrimp. Stir-fry until aromatic.
4. Add chopped Chinese leaves and a bit salt (help soften leaves). Cook over medium low heat with a cover until soft and the liquid comes out. (it takes about 15 minutes).
5. Add more salt, soy sauce and white pepper to adjust the flavour as your liking.
6. Serve with crispy onions (optional).
